This wine comes from the finest grapes on a hillside vineyard in the classic area of Valpolicella, in the province of Verona. The average vine age is 20 years, and they grow in Neotlithic calcarous soil. After harvest, the grapes are left to raisin on mats. After raisining, the grapes are destemmed before fermentation. After several rackings, the wine is aged in oak barrels (15% in oak barriques) for more than three years. The wine is then bottled and stored for 6 to 8 months in underground cellars before being sold.

Tasting Notes:

Garnet red with a red-brown rim showing maturity. Aromas of black cherries, rose petals and liquorice. Round, smooth mouthfeel on the palate with cherries, raisins and some spice. Serve with roasts, game and strong cheeses. Drink over the next 2 to 3 years.
