Col Saliz’s prestige cuvee, Servo Suo is a dazzling Dry Prosecco that is made exclusively from grapes grown in their best vineyard sites. When the glaciers of the Dolomites receded at the end of the last ice age, they created a beautiful amphitheatre shaped valley. Col Saliz harvests these vineyards later than the rest, allowing the grapes to mature and to pick up unique, complex flavors and aromas. This Prosecco, is labeled dry which means that it has a bit more residual sugar and richness than Col Saliz’s Brut.

Tasting Notes:

Pale straw yellow color with very fine bubbles, an indicator of high quality. The distinctive nose has strong citrus, apple and floral notes. On the palate, this Prosecco has a slightly sweet attack, a very fine mousse and a rich, round mouthfeel. The delicate orange, pear and apple fruit flavors are complemented by the thick, persistent perlage and generous finish. Enjoy chilled as a aperitif or with fruit desserts.
